HAND STRETCHING

The stretched curd is worked by hand in wooden tubs, as it was done in the past. This method allows for a unique texture that preserves the product’s organoleptic characteristics. Every movement of our cheese masters’ hands is the result of experience and passion, translating into cheeses with a distinctive structure.

USE OF WHEY

Similar to sourdough in baking, whey inoculum is the heart of our production process. It is a natural ingredient that enriches the milk with complex aromas, giving our products an authentic and inimitable taste. This technique not only enhances the flavor but also ensures consistent quality without the use of artificial additives.

SALTED IN BRINE

Brining in saltwater is an essential step that holds the secret to our mozzarella. We carry it out in vats filled with brine, a carefully prepared solution that balances the flavor and preserves the freshness of the product without altering its naturalness.

HYDROPONIC FEED

We have introduced a hydroponic cultivation system to produce feed for our buffaloes. This method, which uses up to 90% less water compared to traditional techniques, ensures a fresh and balanced diet year-round. In this way, we not only reduce water consumption but also guarantee superior quality milk.

BIOMASS PLANT

The byproducts of our processing and organic waste from our farms are not wasted. Thanks to our biogas plant, we convert these materials into renewable energy, helping to reduce CO2 emissions and making our production energy self-sufficient.

SOLAR PANELS

The energy of the sun is our ally for a sustainable business. The solar panels installed on our farms and in the dairy allow us to meet a large part of our energy needs, reducing reliance on non-renewable sources.
